Berry Oat Bran Muffins
- 3/4 c flour
- 1 c oat bran
- 3/8 c sugar, plus a sprinkle
- 1 tbsp baking powder
- 1/8 tsp salt
- 4 oz cream cheese at room temp
- 1 large egg
- 1/2 c milk
- 1/2 tsp vanilla extract
- 1/4 c canola oil
- 1 cup berries (1/2 c raspberries, 1/2 c blackberries)
- Preheat oven to 400-degrees. Grease muffin tray, both the cups and the tops of the tray.
- Rinse and drain berries on paper towel. Put dry berries into a small bowl and sprinkle with a little sugar.
- Sift flour, sugar, baking powder and salt into a large bowl. Stir in oat bran, mixing dry ingredients well.
- Blend cream cheese and egg in another bowl until smooth. Add milk, vanilla and oil, blending all ingredients until thoroughly mixed.
- Pour liquid ingredients into the bowl of dry ingredients and mix with a wooden spoon until completely combined.
- Gently fold in berries.
- Spoon batter into prepared muffin cups, piling well into each cup.
- Bake 22-25 minutes. Cool muffins in tin for 10-15 minutes.
