Berry Oat Bran Muffins

  1. Preheat oven to 400-degrees. Grease muffin tray, both the cups and the tops of the tray.
  2. Rinse and drain berries on paper towel. Put dry berries into a small bowl and sprinkle with a little sugar.
  3. Sift flour, sugar, baking powder and salt into a large bowl. Stir in oat bran, mixing dry ingredients well.
  4. Blend cream cheese and egg in another bowl until smooth. Add milk, vanilla and oil, blending all ingredients until thoroughly mixed.
  5. Pour liquid ingredients into the bowl of dry ingredients and mix with a wooden spoon until completely combined.
  6. Gently fold in berries.
  7. Spoon batter into prepared muffin cups, piling well into each cup.
  8. Bake 22-25 minutes. Cool muffins in tin for 10-15 minutes.
