Sauteed Sausage, Redskin Potatoes & Veggies
- 1 lg sweet italian pork sausage, casing removed, cut into 1 inch pieces
- 3/4 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1/2 c. frozen roasted redskin potatoes
- 1/4 c. chopped red onion
- 1/4 c. Anaheim or Poblano Chili pepper
- 1/4 c. chopped carrot
- Heat olive oil and vinegar in medium saute pan. Add sausage. Saute until brown on all sides but still a little pink on inside. Add the potatoes (can substitute fresh potatoes but must saute them first since they will take longer than the sausage or boil them first). Saute until potatoes start to brown. Add remaining vegetables. Saute until slightly browned or to your likeness, adding oil and/or vinegar if needed. Serve with poached egg if you like.
