Hawaiian Chicken Breast

  1. Directions
  2. Combine first 5 ingredients. Reserve 1/4 cup marinade; place remaining marinade in a zip-top plastic bag.
  3. Add chicken to bag; seal. Chill 4 hours.
  4. Heat a grill pan over medium-high heat.
  5. Coat pan with cooking spray.
  6. Remove chicken from bag; discard marinade in bag.
  7. Sprinkle chicken with 1/2 teaspoon salt and pepper.
  8. Add chicken to pan; baste with 2 tablespoons reserved marinade.
  9. Cook 6 minutes.
  10. Turn chicken over; baste with 2 tablespoons reserved marinade.
  11. Cook 6 minutes.
  12. Combine rice, 1/4 teaspoon salt, and cilantro.
