Warm Capriotada With Cream
- 6 tablespoons (3/4 stick) Butter
- 8 ounces French Bread, crust removed
- cut into 3/4" cubes. Should equal 12 cups
- 1 1/2 cups firmly packed Brown Sugar
- 1 cup water
- 1 teaspoon Cinnamon
- dash ground Cloves
- 1 teaspoon Aniseed
- 2 tablespoons (1/4 stick) Butter
- Golden Raisins
- 2 large Granny Smith Apples, peeled, finely diced
- 6 ounces Cream Cheese, cut into 1/2" cubes
- 1 cup Walnuts, toasted, coarsely chopped
- Preheat oven to 350.
- Place 6T Butter in baking pan. Place in oven until melted.
- Add Bread and toss to coat. Bake until crisp and brown, 20 minutes.
- Remove and increase temperature to 400.
- Simmer Brown Sugar, Water, Cloves and Cinnamon until syrupy, 5 minutes. Remove from heat and stir in 2T Butter.
- Butter 9" x 13" baking dish. Combine Apples, Bread, Cream Cheese and Nut. Pour into dish. Drizzle with Syrup and mix thoroughly. Allow Bread mixture to absorb syrup.
- Bake 30 minutes. Cover if browning too quickly.
- Serve with Heavy or Whipped Cream. Yield: 6-8 servings.
