Butter Nut Drops
- 1/2 c. butter
- 1/4 c. sugar
- 1 egg, separated
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- 1 c. flour
- 1 Tbsp. lemon juice
- 2 Tbsp. grated orange rind
- 1 Tbsp. grated lemon rind
- 1/2 c. finely ground pecans or Brazil nuts
- red or green candied cherries, halved
- Preheat oven to 350u0b0.
- Cream butter and sugar well.
- Add egg yolk and flavoring.
- Combine dry ingredients and add alternately with the juice and rinds.
- Mix thoroughly; cover and refrigerate for easy handling.
- Preheat oven to 350u0b0.
- Beat egg white slightly.
- Spread nuts on waxed paper.
- Roll dough into tiny balls; dip in egg white and roll in nuts.
- Place on greased cookie sheet 1 inch apart.
- Press cherry on top of each and bake 25 minutes.
- Makes 40.
