Nana'S Coffee Cake

  1. -Put oven at 325
  2. -Greece two 9 inch pans, cover with flour
  3. -In bowl, mix sugar, butter until soft
  4. -Add in (one by one) eggs, with each egg, sift a little bit of flour in (liquid consistency)
  5. -In separate bowl, measure out 8 oz flour
  6. In mug, add 5 spoonfuls of instant coffee with a little bit of boiling water
  7. Mix in the rest of the flour (sift in) and once fully mixed, add about 5-6 tsp of coffee (amount depends on consistency)
  8. Pour into pans, cook for 25 mins in middle shelf
  9. Icing:
  10. 4 oz of butter (4 tsp) softened in a bowl
  11. Sift in Icing Sugar and mix butter, add in 2 tsp of coffee mixture
  12. Continue to add in sugar and coffee
