Upside Down Warm Apple Tart

  1. Mix all the dough ingredients together to obtain a soft dough. Do not overwork the dough. You may mix the dough in the food processor - just pulse until the ingredients are mixed. Wrap the dough in plastic and refrigerate it for 30 minutes.
  2. Preheat the oven to 325?F. Peel and core the apples, then cut each one into 8 wedges. Using half the butter, grease the bottom of a 10-inch by 2-inch no-stick cake pan. Sprinkle 5 tablespoons of the sugar evenly over the butter. Arrange the apple wedges on the sugared butter, evenly and in one layer. Put the pan on the stove, over medium heat, and cook until the sugar caramelizes, about 15 minutes. Remove the pan from the heat, sprinkle with the remaining sugar and dot with the remaining butter. Roll out the dough to a quarter-inch-thick circle, and cover the apple mixture with it. Poke air holes in the top with a fork. Place the entire pan in the preheated oven and bake for 30 minutes, or until the crust is golden brown.
  3. Cover the pan with a platter and flip the tart over onto it. Serve warm, and - if desired - top each serving with a scoop of vanilla ice cream and pour 2 tablespoons of Calvados on each scoop.
