Chocolate Chip Espresso Cookies From Citizen Cake
- 1 1/2 cup of all purpose flour
- 3/4 cup of unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp finely ground espresso-roast coffee beans
- 1 cup unsalted butter (room temp)
- 3/4 cup plus 2 tblsp packed brown sugar
- 1/2 cup plus 1 tblsp of granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/3 cup of chocolate chips
- Preheat oven to 350u0b0F. Sift flour, cocoa powder, baking soda, baking powder, and coffee beans together in a medium bowl.In another bowl, cream sugars and butter together. Then add egg, vanilla and salt. Add the sifted ingredients to the mixture in two installments. Add the chocolate chips. Cover and refrigerate for 30 minutes. Set the cookies on a baking sheet. Cook the cookies for 5 minutes, then turn the pan around and cook for another 3 minutes.
