Winter Pear And Goat Cheese Salad
- 1 7oz goat cheese log (with rind)
- 2 ripe winter pears
- For the dressing
- 2 tbsp red wine vinegar
- 4 tbsp olive oil
- 1 tbsp wholegrain mustard
- 1 tsp runny honey
- 3.5 oz walnut halves, roughly broken, to serve
- 3.5 oz watercress to serve
- Line the grill rack with foil then preheat the grill to high. cut the cheese into four even-sized discs. Halve, core and slice the pears. Arrange in four piles on the foil, brush with olive oil and top each pile with a cheese disc. Grill until lightly golden and bubbling.
- Whisk and season the dressing ingredients. Arrange the watercress on four plates. Put the pears and cheese on top. Spoon over the dressing, scatter nuts and serve
