Mrs. E'S Famous Stuffing
- 1 16oz bag dried stuffing mix (pepperidge farm is what she uses)
- 1 yellow onion, chopped
- 2 celery stalks, chopped
- 1 bag giblets from turkey - neck removed
- 2 cups chicken broth
- 4 tbsp butter
- Grind giblets, onion, and celery in a meat grinder. (May chop up finely or use a food processor if no grinder)
- Heat up butter in a skillet and add giblet, onion, and celery mixture. Saute until cooked, seasoning with salt and pepper.
- Mix giblet mixture with dried stuffing well. Add chicken broth and let sit for 5 minutes. If too dry add a little more broth, but it won't need as much as the package calls for (cuz of the giblets??).
- Bake with turkey either stuffed or in a glass dish until hot (at least 180' if in turkey).
