Teen Breakfast, Quick And Healthy

  1. "Grilled" Cheese Breakfast Sandwich
  2. Slice one pita in half. Sticking with local, I use Alkhyam Bakery whole wheat pitas made here in Chicago.
  3. Place 3 slices of deli cheese inside the pocket. Round cheese slices fit with less fuss than rectangular slices. Each slice is approximately 1 oz, so this makes one protein serving.
  4. Insert in toaster, open side up, and toast on medium.
  5. Nice! - Warm, melty, no added fat for grilling! And portable.
  6. Add a thermos of green tea, and they are good to go. We like Equal Exchange Teas. Since we can't go local on the growers, we make sure it's fair trade and organic. Today was Ceylon Green. One loves it, one thinks it is "ok."
  7. So, two thumbs up via text message from their dad's car.
  8. Lunch was leftover veggies chopped into salad with Black Beans and Newman's Own Cesar Dressing for zing. My kids are partial to Wasa bread, so today I sent sesame crispbreads. Not sure how that will work. I ate leftover veggies and a pita-cheese sandwich for breakfast. I often end up eating for breakfast what I send my kids for lunch. Hmmm
