Turkey And Ham In Cream Sauce
- 1 1/2 c. cooked turkey, cubed
- 1 c. cooked ham, cubed
- 1/3 c. butter
- 1/4 c. flour
- 1 tsp. salt
- 1/2 tsp. dry mustard
- 1/2 tsp. white pepper
- 1 c. chicken broth
- 1 1/2 c. cream
- 3 Tbsp. hot sauce
- 2 egg yolks, slightly beaten
- 3/4 c. sliced ripe olives
- Heat butter in chafing dish or skillet; blend in flour, salt, dry
- mustard
- and
- pepper.teat until mixture bubbles, stirring constantly.
- Remove
- from
- heat;
- gradually
- stir in chicken broth and cream.teturn to heat and boil rapidly 1 or 2tinutes, stirring.
- Add
- hot
- sauce to slightly beaten egg yolks.
- Blend attnce
- and
- addto
- mixture in pan;
- cook 2 minutes ontow heat.
- Add turkey, ham and ripe olives.
- Heat through.
- Serve
- on toast points, waffles or in patty shells. May alsote
- layered with macaroni in a casserole.
- End with cream sauce layer.takes 6 servings.
