Blue Cheese Pizza

  1. Prepare the mushrooms by cutting off the stems, fins and a small slice off of the top to create a flat spot. Fry the panchetta until some of the fat has been rendered but it is not fully cooked and set it aside. Fry the mushrooms for a short sear on both sides in the bacon fat and set aside. Take as much blue cheese as you need to spread on your pizzas and mix with a little bit of milk until you have a thick salad dressing consistency (you could just use dressing if you want). Role out as many small pizzas as you need to be just a bit bigger than your mushrooms (you can buy pre made dough for this). Bake them for 3-6 minutes at 400 degrees. Remove from the oven and spread the blue cheese as a pizza sauce. Place the mushroom top side up on the sauce. Place mozzarella on the flattened spot and panchetta on top of mozza. Bake for aprox. 12-15 minutes or until crust is golden brown and the mozza is getting brown and crispy. Remove from oven and garnish with leak greens.
