Banana Bread
- 1 cup sugar
- 1 stick butter softened (salted)
- 2 eggs slightly beaten
- 3 small or 2 large overripe bananas (mashed)
- 1 tsp apple cider vinegar
- 3 tbsp milk
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- Before you start, grease and flour two eight by four inch loaf pans (or one larger pan) and set the oven to 325 degrees.
- Cream sugar and butter in a big bowl and set aside. Mash bananas in a separate bowl and add beaten eggs to the banana mixture. In a third bowl add vinegar and milk and wait for the milk to curdle (it should look like there are little dots in the milk). When it does, add the mixture to the mashed bananas. Now add the banana mixture to the sugar and butter and beat them together.
- Mix all the dry ingredients together in a separate bowl and add to the batter slowly. Pour the mixture into the two loaf pans and bake 45 minutes to 55 minutes or until a fork in the center comes out clean.
