My Granola Recipe
- 3 cups rolled oats
- 1 cup walnuts-raw-unsalted
- 1 cup almonds-raw-unsalted
- 1/2 cup coconut-large flake-unsweetened
- 1/4 cup flax seed
- 3 tablespoon Stevia
- 1 tablespoon cinnamon
- 1 tablespoon ginger
- 1 teaspoon salt
- 1/4 cup coconut oil-melted
- 3/4 cup egg whites
- 1 cup dried fruit
- Preheat oven to 300 degrees. (convection if available) Put parchment paper on 2 baking sheet-pans.
- Toss dry ingredients in large bowl. Pour melted coconut oil over, and toss. Pour egg whites, and toss. Let sit for 15 min. to soak up liquid.
- Divide between 2 pans. Press oatmeal etc to flatten in pan. Bake for 30 min, rotating pans and flipping after 15 min. Cool on pan, and add dried fruit. Store in jar or container. Does not need to be refrigerated.
