No-Bake Cheese Cake
- 1 (3 oz.) pkg. lemon jello
- 1 c. boiling water
- 1 (8 oz.) pkg. cream cheese
- 1 c. sugar
- 1 tsp. vanilla
- 3 Tbsp. lemon juice
- 1 can chilled evaporated milk
- 1 1/3 c. graham cracker crumbs
- 1/4 c. melted butter
- Empty jello in small bowl.
- Add boiling water.
- Stir until jello is dissolved.
- Cool.
- Cream the cream cheese, sugar and vanilla in medium size bowl.
- Crush graham crackers and add melted butter, mixing until crumbly.
- Empty 2/3 of crumbs in a 10-inch baking dish or pan, 13 x 9 x 2-inch.
- Press into even layer on bottom of pan.
- When lemon mixture begins to thicken, add lemon juice to chilled milk.
- Whip until stiff and holds peaks.
- Fold into jello mixture lightly but thoroughly.
- Pour into prepared pan and sprinkle with remaining crumbs.
- Chill 2 to 3 hours before serving.
