Cook'S Cafe Sugar Cookies
- 1 cup granulated sugar plus additional for sprinkling the cookies
- 1 cup confectioners sugar
- 1 cup flavorless vegetable oil
- 2 large eggs, beaten lightly
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 4 cups all purpose flour
- Into a large bowl whisk together 1 cup of granulated sugar and confectioners sugar and whisk in the oil, eggs, vanilla, salt, baking soda, and cream of tartar. Add the flour and stir until it forms a dough. Form level tablespoons of the dough into balls, arrange the balls 3 inches apart on ungreased baking sheets and flatten them with the bottom of a glass dipped in sugar. The edges will crack a little. Sprinkle with sugar and bake in the middle of a preheated 375 degree oven for 8 minutes, or until they are set but still pale, for chewy cookies, or for 10 minutes, or until they are pale golden, for crisp cookies. Transfer to a rack, and let them cool.
