Christmas Pie
- Make or buy one 9 inch pie crust.
- Filling:
- 6 medium granny smith apples, quartered, cored, and sliced
- 1 cup fresh or frozen cranberries, rinsed and picked over
- 1 cup raisins
- 1/2 teaspoon ground cinnamon
- 3 tablespoons all-purpose flour
- 1 cup sugar
- 1/2 cup water
- For Oatmeal Crisp Topping:
- 1 cup rolled oats
- 1/2 cup all purpose flour
- 1 cup dark brown sugar
- 1/2 cup butter, cut into 1/2 inch pieces
- Combine filling ingredients in large heavy saucepan or stockpot over medium high heat until cranberries pop. Turn filling ingredients into unbaked pie shell.
- For topping, combine flour, sugar, and butter in food processor, and pulse until roughly the size of peas. Too little processing is better than too much. Turn into mixing bowl, and stir in oats. Mound crisp topping on top of pie filling in shell.
- Bake at 350 for 45 minutes or until pie is bubbling and topping is browned.
