Grandma Mashies Stuffed Cabbage
- 1 large head of cabbage
- 3 onions, diced
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
- Ground beef mixture:
- 2 pounds (I'm guessing here)
- 1 large onion, diced
- 1-2 eggs
- 1/2 cup rice
- 2 TBs matzoh meal (or flour)
- 6 oz water
- 1 large can stewed tomatoes
- 1 can tomato sauce
- sour salt or lemon juice
- brown sugar
- separate leaves of cabbage. Cut out core and boil 10 minutes until soft. then let cool and separate.
- In dutch oven, saute onions with paprika, salt and pepper. Add tomatoes and sauce and simmer
- Mix beef with onion, egg, matzo meal, rice and water.
- Place 2-3 TBs of beef mixture in the center of each cabbage leaf and roll up (egg roll fashion)
- Place each cabbage roll in dutch oven and season with sour salt and brown sugar. You will want to taste the sauce to adjust seasonings.
- Cook on stove for 1 hour. Can also be placed in oven with cover on or off ( top cabbage rolls will brown if left uncovered.
