Crab Stuffed Chicken Breasts
- 6 chicken breasts, skinned and boned
- 3 Tbsp. butter
- 1/4 c. flour
- 1 tsp. instant chicken bouillon
- 3/4 c. milk
- 3/4 c. water
- 1/3 c. dry white wine
- 1/4 c. chopped onion
- 1 Tbsp. butter
- 1 (7 oz.) can crab meat
- 1 (4 oz.) can chopped mushrooms
- 1/2 c. crushed saltine crackers
- 2 Tbsp. fresh parsley or 1 Tbsp. dry parsley
- 1/2 tsp. salt
- dash of pepper
- 1 1/2 c. shredded Swiss cheese
- 1/2 tsp. paprika
- 1 1/2 doz. cooked shrimp
- Pound chicken breasts flat.
- Make Sauce:
- Melt 3 tablespoons of butter.
- Stir in flour and bouillon.
- Add milk, water and wine. Cook until thick.
- Set aside.
