Ravioli With Parmesan, Butter & Herbs
- Coarse salt
- 1 pound fresh cheese or pumpkin ravioli (or other)
- 6 tbs unsalted butter, room temperature
- 1/2 cup freshly grated Parmesan
- 2 tablespoons chopped mixed fresh herbs such as chives, oregano, marjoram, chervil, parsley, basil or tarragon
- Freshly ground black pepper
- Fresh lemon juice, to taste
- Bring large pot of water to boil, add 1/4 cup salt and cook, stirring frequently, until al dente, 5 to 10 minutes depending on the ravioli (be careful, not good if smooshy).
- Meanwhile, combine other ingredients in a large bowl. Drain ravioli well and add to bowl. Toss gently until butter is melted and ingredients are well mixed. Add salt, pepper & lemon juice to taste and serve immediately.
