Walnut Squash Cake
- 2 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 1 1/2 c. powdered sugar
- 1 stick butter, softened
- 1/4 c. vegetable oil
- 1/4 c. orange juice
- 4 large eggs
- 1 tsp. vanilla
- 2 c. winter squash
- 1/2 c. walnuts, chopped
- In large bowl combine flour, baking powder, soda, cinnamon, salt and nutmeg; set aside.
- In a large bowl with mixer on medium speed, beat sugar and butter until smooth.
- Beat in the oil, juice, eggs and vanilla.
- Reduce mixer to low.
- Beat flour mixture until smooth.
- Stir in squash until well mixed.
- Divide batter in 2 (9-inch) pans.
- Bake for 30 minute at 350u0b0.
- Cool 5 minutes before removing them from pans.
