Italian Hens With Roasted Pear And Garlic
- 4 cornnish hens
- salt and pepper to taste
- 2 ripe pears, peeled and cored and diced, plus 2 whole pears.
- 1 cup coarsely shredded parmigiano cheese
- 2 cloves garlic,peeled and minced.
- 1 teaspoon miced fresh sage
- 1 tablespoon flat leaf parsley
- 1 teaspoon minced thyme
- 2 tablespoons unsalted butter,cut into bits
- 1/4 cup olive oil
- 1/4 cup dry white wine
- 2 cups chicken stock
- Preheat oven to 375 degrees.
- Rinse hens and pat dry. Sprinkle inside and out with salt and pepper.Mix diced pear,cheese, garlic,sage, parsley, thyme and butter.
- Stuff into birds. Close with skewers.
- Heat olive oil and brown hens on all sides. Remove from pan. Deglaze pan with wine,add stock and cook over medium heat until slightly reduced. Return hens to pan
- Peel, halve and core remaining 2 pears. Add to pan and put in oven, uncovered 20 to 25 minutes.
- Test for doneness.
- Transfer hens and pear halves to serving platter Strain juices and serve on the side.
