Italian Hens With Roasted Pear And Garlic

  1. Preheat oven to 375 degrees.
  2. Rinse hens and pat dry. Sprinkle inside and out with salt and pepper.Mix diced pear,cheese, garlic,sage, parsley, thyme and butter.
  3. Stuff into birds. Close with skewers.
  4. Heat olive oil and brown hens on all sides. Remove from pan. Deglaze pan with wine,add stock and cook over medium heat until slightly reduced. Return hens to pan
  5. Peel, halve and core remaining 2 pears. Add to pan and put in oven, uncovered 20 to 25 minutes.
  6. Test for doneness.
  7. Transfer hens and pear halves to serving platter Strain juices and serve on the side.
