Spicy Roast Turkey
- 1 frozen whole boneless turkey, thawed as to directions on pkg.
- 8 or 10 large garlic cloves
- 3 Tbsp. rosemary
- 1 tsp. paprika
- 1 Tbsp. coarse ground black pepper
- 1 tsp. coarse kosher salt
- 2 Tbsp. olive oil
- garnish with rosemary and red pepper
- Remove mesh from turkey and flatten turkey on a cutting board, skin side down.
- Combine garlic, rosemary, pepper and salt in a blender.
- Turn on motor and gradually add oil until this is chopped coarsely.
- Spread half the garlic mixutre over inside of turkey.
- Reroll turkey to its original log shape, tying firmly every two inches.
- Spread remaining mixture on the outside.
- Roast on rack in roasting pan.
- Roast at 350u0b0 for 1 1/2 to 2 hours or until meat thermometer registers 170u0b0.
- Remove from oven and let stand 20 minutes.
- Remove strings and slice.
