Warm Scallop-Rice Salad(Makes 1 Serving)

  1. In 1-quart microwavable casserole, combine leek, pepper and garlic.
  2. Cover and microwave on High for 2 minutes, until leek is tender.
  3. Add rice and 3/4 cup water and stir to combine. Microwave uncovered on High for 5 minutes, stirring once halfway through cooking.
  4. Cover and microwave on Medium for 3 minutes. Add scallops.
  5. Cover and microwave on Medium for 3 minutes.
  6. Let stand for 1 minute until scallops are opaque.
  7. Add remaining ingredients and stir to combine.
  8. Serve over greens, if desired.
