Reuben Casserole(A Popular Sandwich Idea, Translated Into A Casserole)
- 1 (16 oz.) can sauerkraut, drained
- 1 (12 oz.) can corned beef, broken into small pieces
- 2 c. Swiss cheese, shredded (8 oz.)
- 1/2 c. mayonnaise
- 1/4 c. Thousand Island salad dressing
- 2 medium tomatoes, sliced
- 3 Tbsp. margarine, melted
- 1/3 c. pumpernickel bread crumbs
- caraway seed
- Heat oven to 350u0b0.
- Place sauerkraut in 1 1/2-quart casserole. Top with layer of corned beef and then cheese.
- Combine mayonnaise and salad dressing and spread over cheese.
- Arrange tomato slices on top.
- Stir bread crumbs into melted margarine; sprinkle over casserole.
- Top with dash of caraway seed.
- Bake for 50 minutes. Serves 6.
