Ecclectic Summer Salad

  1. Slice red onions and marinate, overnight, in lime juice and salt. In a large bowl, add watermelon, cucumbers, grapes, prossuito, red onions, parsley, and sunflower seeds. Mix thoroughly. Drizzle olive oil and add salt. Drizzle a bit of white wine vinegar, to taste. Crumble goat cheese, to taste. Toss. Squeeze remaining lime juice over salad to taste.
