Spice Rubbed Shrimp Soft Tacos With Red Salsa
- 1 cup refrigerated fresh salsa
- 2 tablespoons chopped fresh cilantro
- 1/2 jalapeno seeded and minced
- 1/2 tablespoon fresh lime juice
- 1 1/2 pounds peeled medium shrimp
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 teaspoons canola oil
- 1/4 teaspoon salt
- 1/4 teaspoon honey
- 1/4 teaspoon black pepper
- dash of cayenne pepper
- cooking spray
- 8 (6 inch) 96% fat free soft tortillas
- 2 cups packaged angel hair slaw
- 1. Preheat broiler
- 2. Combine salsa and next 3 ingredients in medium bowl and set aside.
- 3. Place shrimp in a large bowl. Add cumin and next 5 ingredients and toss gently to coat. Arrange shrimp in a single layer on rack of a broiler pan coated with cooking spray. Broil 5 mins or until shrimp are done turning once
- 4. Heat tortillas according to package directions. To serve top tortillas with slaw shrimp and salsa.
