Spaghetti With Broccoli And Spicy Turkey Sausages
- 2 spicy Italian style Turkey sausages, casings removed
- 1/2 T fresh rosemary, crumbled
- 3 lg garlic cloves, minced
- 1 shallot, minced
- 2 T extra virgin olive oil
- 1 14.5 oz can diced tomatoes in juice
- 1 1/2 T vermouth or dry white wine
- 1 1/2 T red wine vinegar
- pinch of red pepper flakes
- pinch of sugar
- salt to taste
- fresh ground black pepper
- 8-12 oz spaghetti (depending on appetite)
- 1/4 c fresh basil, torn
- 4 oz fresh mozzarella ovolini (small balls)
- 1/2 c broccoli florets, separated
- Heat 10 in. skillet to medium/high heat. Crumble sausage and cook till no longer pink and beginning to brown, about 4 minutes. Add 1/2 of rosemary and stir.
- Remove sausage with slotted spoon into small bowl and set aside.
- Drain off fat from skillet but do not scrape out browned bits. Return skillet to heat and add olive oil. Let heat 1 minute. Add garlic, shallot, red pepper flakes and remaining rosemary. Saute about 3 minutes until shallot is tender. Add vermouth and cook until liquid is almost absorbed. Add can of tomatoes and simmer, 3 minutes. Add sugar, red wine vinegar and salt to taste. Cover and simmer over low heat, about 20 minutes.
- Meanwhile, in a heavy pot, boil water for pasta. Once water is boiling, flash cook broccoli, using a slotted spoon or metal strainer with handle to remove. Place broccoli in bowl of cold water to stop cooking.
- Add pasta to still boiling water and cook until al dente, 10-12 minutes. Drain pasta thoroughly and return to pot. Add sauce, cooked broccoli, and mozzarella ovolini and gently combine. Serve immediately.
