Asparagus W/Tarragon Butter

  1. Tarragon butter: In food processor, fitted w/metal-blade, add butter, olive oil, vinegar, Dijon, sugar & garlic & process until well combined. Add tarragon & pulse until thoroughly mixed. Taste & season w/salt & pepper.
  2. Asparagus: Place large pot of salted water on stove to boil. When water comes to rolling boil, add asparagus & cook until tender, about 2-3 mins.
  3. Transfer asparagus to large bowl & toss w/ tarragon butter.
  4. Arrange asparagus on large platter, drizzle tarragon butter over the top, serve immediately.
