Cappuccino Creme Brule

  1. Combine carnation milk and coffee in saucepan.
  2. Heat just until small bubbles form around edge of pan.
  3. Add granulated sugar, vanilla and salt, stirring constantly until sugar has disolved.
  4. Beat eggs well in large bowl.
  5. Gradually stir hot milk mixture into egg mixture.
  6. Pour into a 6" (4 cup) souffle dish, and then place dish into a pan of hot water about 1" up the outside of the dish.
  7. Bake at 300 deg. for 50-60 mins, or just until center is set and knife inserted in center comes out clean. Chill until cooled.
  8. Just before serving, sprinkle brown sugar over custard. Place as close as possible under pre-heated broiler and broil until sugar is melted and golden brown.
