Cappuccino Creme Brule
- 12 oz carnation milk
- 1 cup brewed coffee
- 2/3 cup sugar (Granulated)
- 1 tsp vanilla
- 1/4 tsp salt
- 4 eggs
- 1/4 cup lightly packed brown sugar
- Combine carnation milk and coffee in saucepan.
- Heat just until small bubbles form around edge of pan.
- Add granulated sugar, vanilla and salt, stirring constantly until sugar has disolved.
- Beat eggs well in large bowl.
- Gradually stir hot milk mixture into egg mixture.
- Pour into a 6" (4 cup) souffle dish, and then place dish into a pan of hot water about 1" up the outside of the dish.
- Bake at 300 deg. for 50-60 mins, or just until center is set and knife inserted in center comes out clean. Chill until cooled.
- Just before serving, sprinkle brown sugar over custard. Place as close as possible under pre-heated broiler and broil until sugar is melted and golden brown.
