Diabetic Peanut Butter Cookies

  1. Preheat oven to 400u0b0.
  2. Sift together flour, baking powder and salt.
  3. Cream together margarine, peanut butter, orange rind and vanilla.
  4. Add egg, orange juice and artificial sweetener; blend well.
  5. Add dry ingredients gradually; mix well after each addition.
  6. Add raisins; mix well.
  7. Mix 1 level tablespoon of dough for each cookie.
  8. Roll between hands to form ball.
  9. Place 2 inches apart on an ungreased cookie sheet; flatten with fork.
  10. Bake about 15 minutes.
  11. Store in tightly covered tin.
  12. Tastes better 24 hours after baking.
  13. Makes 12 servings.
  14. Yield:
  15. 24 cookies.
  16. One serving, 2 cookies.
