Mushroom Veggie Burgers
- Cracked wheat 1/2 cup
- Bulgur 1/3 cup
- Salt 1/2 tsp
- Boiling water 1 1/2 cups
- Canola oil 1 tbsp
- Chopped fresh white mushrooms 3 cups
- Finely chopped oinion 1 cup
- Finely chopped celery 1/4 cup
- Finely chopped leek (white part only)
- Garlic clove, minced 1
- Raw cashews 1/2 cup
- Large egg 1
- Fine dry whole wheat bread crumbs 1 cup
- Salt
- Pepper
- Cooking spray
- Combine first 3 ingredients in med. heatproof bowl. Add boiling water, stir. Let stand, covered, for 30 mins until bulgur and wheat are tender. Drain well. Transfer to large bowl.
- Heat canola oil in large frying pan on medium. Add next 5 ingredients. Cook for 15 mins, stirring occasionally, until veggies start to brown and liquid is evaporated. Cool.
- Process cashews in food processor until finely chopped.
- Add next 4 ingredients, bulgar mixture and veggies. Process with on/off motion until combined. Mixture should still be coarse. Transfer to large bowl. Divide into 6 equal portions and shape into patties.
- Place patties on greased baking sheet with sides. Spray with cooking spray. Broil on center rack in oven rack for 5 minutes. Turn patties over. Spray with cooking spray. Broil for another 5 mins until brown.
