Mushroom Veggie Burgers

  1. Combine first 3 ingredients in med. heatproof bowl. Add boiling water, stir. Let stand, covered, for 30 mins until bulgur and wheat are tender. Drain well. Transfer to large bowl.
  2. Heat canola oil in large frying pan on medium. Add next 5 ingredients. Cook for 15 mins, stirring occasionally, until veggies start to brown and liquid is evaporated. Cool.
  3. Process cashews in food processor until finely chopped.
  4. Add next 4 ingredients, bulgar mixture and veggies. Process with on/off motion until combined. Mixture should still be coarse. Transfer to large bowl. Divide into 6 equal portions and shape into patties.
  5. Place patties on greased baking sheet with sides. Spray with cooking spray. Broil on center rack in oven rack for 5 minutes. Turn patties over. Spray with cooking spray. Broil for another 5 mins until brown.
