Billy'S Chili
- 1-1.5 pounds Ground chuck
- 1 can Kidney beans, drained
- 1 package Harissa paste (1 tube)
- 2 ounces Dried ancho chiles (3 large)
- 2 cups Large onion, chopped
- 6 cloves Garlic cloves, minced
- 2 tablespoons Salt
- 3 tablespoons Chili powder
- 1 tablespoon Cumin
- 1 teaspoon Cayenne pepper
- 1 tablespoon Paprika
- 1 tablespoon Ground Coriander
- 1 tablespoon Oregano
- 1 cans San Marzano Whole Tomatoes
- 1. Brown ground chuck and drain
- 2. In small saucepan, cover chiles with water and boil 5 minutes to soften
- 3. Add chiles and their water, canned tomatoes, garlic, and harissa paste into blender and puree
- 4. Sautee onions until tender in large pot
- 5. Add beef and all spices. Mix well.
- 6. Add blended mixture. Bring to a simmer and cook for 45 mins until flavors marry
