Garlic Chicken(Taste - Strong)
- 1 large cooking chicken
- 2 full bulbs garlic
- 2 to 3 c. bread stuffing (homemade or store bought)
- 1 c. heavy cream or half and half
- 2 1/2 c. chicken broth
- 2 Tbsp. cornstarch or flour
- Thaw chicken completely.
- Discard organ pack.
- Wash.
- With chicken breast up, starting from back end, work fingers between skin and meat, separating enough for stuffing.
- Break up and peel 1 bulb garlic; put through garlic press and mince finely.
- Prepare stuffing per directions, using chicken broth for water needed and add 1/2 minced garlic (season to taste).
- Take other 1/2 of minced garlic and rub down chicken, inside and out, even under skin. Stuff chicken full with stuffing.
- Preheat oven to 375u0b0.
- Place chicken on rack in baking dish; pour 1/2 to 3/4 cup chicken broth in bottom and 5 to 6 cloves garlic, chopped.
- Bake 2 to 2 1/2 hours until done.
