Slow Cooker Whole Chicken + Gravy
- 3-4 lb whole chicken
- seasoning or herb blend
- fruit or vegetable for stuffing, e.g. lemon, orange, lime, apple, cucumber
- 2 T butter
- 2 onions, thinly sliced
- 6 cloves garlic, thinly sliced
- 1 T tomato paste
- 1/2 c chicken stock OR 1/4 c chicken broth + 1/4 c white wine
- Pat chicken dry with paper towels. Salt and pepper inside and outside. Rub with seasoning or herb blend OR put seasoning or herb mix under the skin. Stuff cavity with fruit/vegetables.
- Melt butter in skillet over medium heat; add onions and garlic and saute until soft. Add tomato paste. When vegetables cooked to desired doneness, put all into base of crock pot.
- Use liquid to deglaze pan. Pour over vegetables in crock pot. Add chicken to crockpot, breast side down.
- When cooking 3.3 lb chicken, cooked 1 hour at low, 2 hours at high, 1 more hour at low.
- Remove chicken from crockpot to bowl. Use immersion blender to puree vegetables and drippings into "gravy".
- Serve chicken with gravy.
