Honey-Sherry Tailgating Baby Back Ribs
- 2 Baby back rib slabs
- Marinade: 1 cup soy sauce, 3/4 cup honey, 1 cup dry sherry, 1 tsp cinnamon, 1 tsp fresh ground pepper, 1 tsp anise seed crushed, 1/2 tsp cloves, 1 TBSP instant tea crystals, 1 crushed garlic clove.
- Brine of water to cover ribs, 1/2 cup cider vinegar and 1/4 cup Kosher salt.
- Brine: Lightly simmer the ribs in a dutch oven filled to cover the ribs with water, 1/2 cup cider vinegar and 1/4 cup Kosher salt. Bring to boil and then lower heat and simmer for 1-1/4 hrs. Remove ribs and cool slightly.
- Bring marinade ingredients to a boil, using 1/2 cup of honey and then simmer for 10 minutes. Cool marinade slightly and then place in a large container which will hold the ribs. Place the ribs in the marinade and refrigerate over night.
- The day of the picnic remove the ribs from the marinade and grill the ribs quickly over charcoal or gas grill for approximately 15 to 20 minutes, basting them with the leftover honey. Serve with extra honey as accompaniment.
