Noonie'S Banana Bread
- 1 1/4 cups sugar
- 1 stick unsalted butter
- 2 large eggs
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/4 cup sour cream or Greek yogurt
- 1 cup mashed bananas, ripe to very ripe
- 1 1/2 cups flour
- 1 tsp. vanilla extract
- Preheat oven to 400Au0b0F. Butter 9" bread pan very well.
- Cream butter with sugar. If using an electric stand mixer, use the paddle attachment. Add eggs one at a time. Add sour cream or yogurt and vanilla until blended together. Add bananas and stir until just mixed.
- Sift flour, baking soda and salt together. Add dry ingredients to wet ingredients in mixer and beat until very well mixed.
- Pour batter into 9 inch bread pan and place on the center rack of the oven. Bake for 50 to 55 minutes. Banana bread is done when a toothpick comes out clean.
- Let cool in pan on rack for 20 minutes before serving.
