Gold Grits
- 2 cups sweet potatoes, drained
- 4 cups water
- 1 cup grits
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/2 cup margarine
- 1 Tablespoon Worcestershine sauce
- 4 egg whites
- Nonstick cooking spray
- 1) In a blender, puree the sweet potatoes.
- 2) In a large saucepan, boil the water and add the grits, garlic, and salt. Reduce the heat, stir and cover. Cook over low heat for 15 minutes, stirring often, until the grits become thick. Add the margarine, pureed sweet potatoes, and Worchestershine sauce.
- 3) In a large bowl, beat the egg whites until stiff. Fold the egg whits into the sweet potato mixture. Spray a souffle dish with nonstick cooking spray. Pour mixture into prepared dish and bake at 350 degrees for 40 minutes.
