Cranberry Orange Loaf

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Grease an 8x4 inch loaf pan.
  3. In a large bowl, combine flour, cranberries, sugar, nuts, baking powder and salt. In a small bowl, beat egg, orange peel, orange juice and mayonnaise until smooth. Stir into flour mixture just until moistened - batter will be stiff!! Spoon into pan.
  4. Bake in oven for 60 - 70 minutes. Loaf is done when toothpick inserted in centre comes out clean. Cool on rack x 10 minutes. Remove from pan anf let cool completely on rack.
