Dana'S Cranberry Coconut & White Chooclate Chip Lovelies
- 3 Cups all purpose flour
- 1 tsp baking soda
- 3/4 tsp salt
- 1 Cup (2 sticks) unsalted butter, room temperature
- 1/2 Cup (packed) light brown sugar
- 1/4 Cup white sugar
- 2 large eggs
- 1 Tablespoon vanilla extract
- 1 Cup dried cranberries
- 1 C white chocolate chips
- 1/2 C dried unsweetened coconut (finely shredded kind)
- Preheat oven to 350 F
- Spray baking sheets with non stick spray.
- Sift first 3 ingredients into medium bowl. Using electric mixture, beat butter in large bowl until fluffy. Add both sugars and beat until blended. Beat in eggs, 1 at a time, then vanilla. Add dry ingredients and beat until just blended. Using spatula, stir in cranberries, white chocolate chips and coconut. Drop by level tablespoons onto cookie sheets, spacing 1 1/2 inches apart(just eyeball it!)
- Bake cookies just until lightly golden, about 11 minutes. Cool on sheets.
- *optional: you can drizzle melted white chocolate on cookies for a decorative Martha Stewart presentation.
