Lemon Party Meringue Pie

  1. Combine pie filling mix, 2/3 cup sugar and 1/4 cup of the water in saucepan.
  2. Blend in egg yolks and remaining water.
  3. Cook and stir over medium heat until mixture comes to a full, bubbling boil.
  4. Remove from heat.
  5. Blend in lemon juice and butter.
  6. Cool 5 minutes, stirring twice.
  7. Pour into pie shell.
  8. Beat egg whites until foamy throughout.
  9. Gradually beat in 6 tablespoons of sugar and continue beating until mixture will form stiff, shiny peaks. Spread over pie filling.
  10. Bake at 425u0b0 for 5 to 10 minutes or until meringue is delicately browned.
  11. Cool at least 4 hours before cutting.
