Chocolate Chip Cheesecake

  1. Combine wafer crumbs with butter and 1 tablespoon sugar.
  2. Press into greased 9 x 3-inch spring-form pan.
  3. Refrigerate.
  4. Beat together 2 packages cream cheese, sugar and flour until creamy smooth.
  5. Beat in eggs, one at a time.
  6. Add remaining cream cheese alternately with the eggs, beating well after each addition.
  7. Blend in vanilla and cream.
  8. Stir in chocolate chips.
  9. Pour into pan. Place on cookie sheet.
  10. Bake at 475u0b0 for 10 minutes, then at 250u0b0 for 1 hour.
  11. Let stand in turned off oven 1 1/2 hours more.
  12. Open oven door partially and leave in 30 minutes more.
  13. Top will have cracked appearance.
  14. Cool on rack to room temperature.
  15. Wrap and refrigerate overnight.
  16. To serve, remove from pan.
  17. Garnish with chocolate curls or piped on sweet cream cheese.
  18. Serves 16 to 18.
