Chop Suey
- 2 Tbsp. butter
- 1 1/2 lb. veal, pork, lamb or beef
- 1 tsp. salt (for each 1 lb. meat)
- pepper
- 1 c. water
- 2 Tbsp. butter
- 2 c. onion
- 2 c. celery
- 1/2 c. green peppers
- 1/4 c. pimento
- 1 small can mushrooms
- 1/4 c. cornstarch plus 1/4 c. water
- 1 1/2 Tbsp. Chinese molasses
- a little soy sauce
- Brown meat in butter; sprinkle with salt and pepper.
- Cover meat with water; steam for 30 minutes.
- Add 1/4 cup water to butter.
- Add celery, green peppers and onion.
- Cover and steam 5 or 8 minutes.
- Combine vegetables with the meat.
- Add mushrooms, Chinese molasses and sauce.
- Add cornstarch mix.
- Cook until boiling point.
- Cook gently for about 5 minutes.
