Quick & Easy Chocolate Pudding Pie
- 1 cup Cookie crumbs
- 2 tablespoon Butter, melted
- 1/4 teaspoon Salt
- 4 tablespoon Cocoa
- 3 tablespoon Cornstarch
- 4 tablespoon Sugar
- 1 cup Milk, whole
- 1 teaspoon Instant Coffee Powder
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 1 tablespoon Butter
- 2 tablespoon Liqueur / Flavouring (Optional)
- FILLING:
- 1) Mix dry ingredients for filling in a medium saucepan, whisking gently to mix (no heat)
- 2) Add 1/3 cup cold milk to dry ingredients, whisk well to make a smooth paste and break down all lumps. Add remaining milk a little at a time, and mix well till smooth. (No heat)
- 3) Turn on heat to medium, and stir mixture gently as it heats up to prevent lumps. When it comes to a boil, lower heat and continue to stir at a boil for one minute. Then turn off heat and move pan off.
- 4) Add butter, vanilla, and liqueur/flavouring if using. Beat mixture for 1-2 minutes until glossy and cooling down.
- 5) Pour filling into crust, tap gently to release any bubbles, and smooth top. Return to fridge to set.
- CRUST:
- 1) MIx melted butter, cookie crumbs, and salt. Press well into a shallow 8" tart pan.
- 2) Put into fridge to set while the filling is prepared
