TwomamaS Apple Cake
- 3 cups flour, divided
- 2 cups sugar
- 3 eggs
- 11/2 cup vegetable oil
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons vanilla
- 1 cup pecans, chopped
- 1 cup coconut
- 3 cups apples, cored, peeled and chopped *
- 1 cup dates, chopped
- Glaze for Apple Cake
- Ingredients:
- 1/2 cup of butter (1 stick)
- 1 cup light brown sugar
- 1/2 cup milk
- In a small sauce pan, melt the butter and gradually add brown sugar and milk. Cook until it bubbles on low and glaze gets a little thick; stirring gently to keep from scorching.
- Pour over cooled cake, spooning until cake is glazed and glaze sets.
- In a large mixing bowl, combine sugar and eggs. Add oil gradually and then add vanilla. In a separate bowl, sift dry ingredients; reserving 1/2 cup flour to toss apples, dates and coconut in a bowl.
- Add dry ingredients to eggs and sugar mixture; mix well. Add floured fruit and nuts; stirring until combined. Pour batter into a greased and floured prepared tube pan.
- In a preheated 300 degree oven bake for 11/2 hours or until a cake tester comes out clean. Carefully remove cake from the pan and cool on a rack. When cool pour glaze over the cake.
