Twomama’S Apple Cake

  1. In a large mixing bowl, combine sugar and eggs. Add oil gradually and then add vanilla. In a separate bowl, sift dry ingredients; reserving 1/2 cup flour to toss apples, dates and coconut in a bowl.
  2. Add dry ingredients to eggs and sugar mixture; mix well. Add floured fruit and nuts; stirring until combined. Pour batter into a greased and floured prepared tube pan.
  3. In a preheated 300 degree oven bake for 11/2 hours or until a cake tester comes out clean. Carefully remove cake from the pan and cool on a rack. When cool pour glaze over the cake.
