Summers Night Granola
- 3 cups old-fashioned oats
- 1 cup coarsely chopped pecans
- 4 tablespoons maple syrup
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon (generous) salt
- 1/4 teaspoon cardamon
- a pinch of nutmeg
- zest of one lemon
- 1/4 cup chopped walnuts
- 1 tablespoon pumpkin seed
- 2 tablespoons flax seed
- 1/3 cup of honey
- 2 tablespoons sesame oil
- 1 cup dried blueberries
- Pre-heat oven to 300 degrees F. Line rimmed baking sheet with parchment. Mix first 12 ingredients in large bowl. Stir honey and oil in saucepan over medium heat until smooth. Pour honey mixture over oat mixture and toss. Spread on prepared sheet. Bake until golden, stirring every 10 minutes (about 40 minutes). Place sheet on rack. Stir granola and cool. Mix in blueberries. Store airtight.
