Cheese Grits

  1. Boil, 1 cup water, 1 cup milk, 2 cloves garlic, salt, in the top of a double boiler, directly over the heat.
  2. Add slowly 1 cup stone ground white GRITS (not instant)
  3. Stir 10 minutes over low heat
  4. Put over hot water (bottom of double boiler)
  5. Cover and cook 10 minutes, stirring occasionally.
  6. Add part of the grits to 3 beaten EGGS, return to pot and combine well.
  7. Remove from heat, add, 1/2 cup BUTTER, 2 cups (1/2 #) grated CHEDDAR CHEESE, 1/2 cup PARMESAN CHEESE.
  8. (some add minced garlic here)
  9. Pour into a well-greased 2 qt casserole that has been sprinkle with additional Parmesan cheese
  10. sprinkle on top additional PARMESAN CHEESE (and 1/4 cup CHEDDAR)
  11. Bake 30 minutes at 350F until knife is clean
