Cheese Grits
- CHEESE GRITS
- 1 cup WATER
- 1 cup MILK
- (2 cloves minced garlic)
- (1 TBL SEASONED SALT)
- 1 cup stone ground white GRITS (not instant)
- 3 EGGS
- 1/2 cup BUTTER
- 2 cups (1/2 #) grated CHEDDAR CHEESE
- 1/2 cup PARMESAN CHEESE
- Boil, 1 cup water, 1 cup milk, 2 cloves garlic, salt, in the top of a double boiler, directly over the heat.
- Add slowly 1 cup stone ground white GRITS (not instant)
- Stir 10 minutes over low heat
- Put over hot water (bottom of double boiler)
- Cover and cook 10 minutes, stirring occasionally.
- Add part of the grits to 3 beaten EGGS, return to pot and combine well.
- Remove from heat, add, 1/2 cup BUTTER, 2 cups (1/2 #) grated CHEDDAR CHEESE, 1/2 cup PARMESAN CHEESE.
- (some add minced garlic here)
- Pour into a well-greased 2 qt casserole that has been sprinkle with additional Parmesan cheese
- sprinkle on top additional PARMESAN CHEESE (and 1/4 cup CHEDDAR)
- Bake 30 minutes at 350F until knife is clean
