Carrots & Lima Beans On Quinoa
- 1 bunch of med. carrots (~6)
- 2 cups fresh lima beans
- 1 clove garlic
- 3 T. butter
- splash of white wine
- 1 T. chopped fresh dill
- salt & pepper to taste
- for quinoa:
- 2 cups quinoa
- 1/4 tsp. cumin
- salt & pepper to taste
- melt 2 T. butter in skillet over medium heat.
- scrub carrots, cut into 1/2" slices on the diagonal.
- add carrots and lima beans to skillet.
- saute for 5 minutes.
- mince garlic and add to pan.
- add splash of white wine, stir, cover and simmer for 5 minutes.
- remove lid, add 1 T. butter, dill and salt & pepper to taste.
- meanwhile, rinse quinoa under cold water.
- bring 4 c. water to boil, add quinoa, cover and simmer until water is absorbed ~12 minutes.
- fluff quinoa, add salt & pepper to taste and cumin, stir well.
- serve quinoa topped with vegetables.
