Carrots & Lima Beans On Quinoa

  1. melt 2 T. butter in skillet over medium heat.
  2. scrub carrots, cut into 1/2" slices on the diagonal.
  3. add carrots and lima beans to skillet.
  4. saute for 5 minutes.
  5. mince garlic and add to pan.
  6. add splash of white wine, stir, cover and simmer for 5 minutes.
  7. remove lid, add 1 T. butter, dill and salt & pepper to taste.
  8. meanwhile, rinse quinoa under cold water.
  9. bring 4 c. water to boil, add quinoa, cover and simmer until water is absorbed ~12 minutes.
  10. fluff quinoa, add salt & pepper to taste and cumin, stir well.
  11. serve quinoa topped with vegetables.
