Blue Cornbread
- 2 1/4 cups flour
- 1 3/4 cups blue cornmeal ( or yellow)
- 1 cup sugar ( or less)
- 1/3 cup pine nuts
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 3/4 tsp salt
- 1 1/4 cups milk
- 3/4 cups vegetable oil
- 3 large eggs
- 1/2 cup buttermilk
- 11/2 cups frozen corn kernels, thawed & drained
- Preheat oven to 350.
- Butter 13x9x2" glass baking dish.
- Whisk flour, cornmeal, sugar, pine nuts, baking powder, baking soda and salt in large bowl to blend.
- Whisk milk, vegetable oil, eggs and buttermilk in medium bowl to blend.
- Add liquids to dry ingredients and whisk to blend.
- Fold in corn.
- Pour batter into prepared dish.
- Bake until tester comes out clean, about 40 min.
- Cut into squares and serve warm.
